This course explores the theories and philosophy of nutritional microbiology with emphasis on basic concepts and techniques of microbiology. Important topics include the world food crisis, the significance of microorganisms to food preparation and spoilage, methods of microbial control, food- transmitted diseases, and food technology development.
Student Learning Outcomes of the Course:
- Students will demonstrate an understanding of the methods scientists use to explore natural phenomena, including observation, hypothesis development, measurement and data collection, experimentation, evaluation of evidence, and employment of mathematical analysis.
- Students will apply scientific data, concepts, and models in one of the natural sciences.
